With the onset of the open lobster season, a number of Bahamian resturants are celebrating the delicacy by offering special menus.

Since the season opened on August 1,lobster tails can be seen at locals docks, in produce section of supermarkets, and on platters at local restaurants in abundance.

At Ristorante Villaggio patrons can enjoy a variety of lobster dishes during the resturant's annual lobster extravagenza.

Dion Forbes, General Manager at Ristoranté Villaggio, told Tribune Taste that August is their most popular time of year since they usually run a lobster extravaganza the first week of August every year." We run a number of specials, with eight different dishes featuring the lobster,' he said.

This year they have created a delicious combination of lobster meat and vegetables in a lobster vegetable spring roll. The vegetables and lobster meat are rolled nicely together in a crispy golden flaked dough.

And for those who want a light bite, the lemon grass poached lobster salad is another dish of choice or you can try a spaghetti and roasted lobster tail combo served with a spicy tomato sauce and classic lobster thermidor in brandy and mustard cream.

People are flocking to Villaggio's this around this time, Mr Forbes said. The prices at the popular restaurant range from $36 to $40 for the entrees. The special will last until the end of Aungust.

"Throughout the year we might run one or two more," he said.

Max Innocenci, top chef and owner of Provence Restaurant at Olde Town Sandy Port told Tribune Taste: "We have a lobster fest dinner every Monday and Wednesday for 40 dollars per person. It has attracted quite a number of people especially on Wednesday nights."

When asked why he had chosen to run the lobster fest, Mr Innocenci jokingly said " because I am a genius and you have to be creative".

Provence's Restaurant lobster menu includes lobster maccaroni and lobster thermidor as well as a chicken breast with lobster, and losbster lasagna for entrees, just to name a few.

The Bahamian lobster season opened on August 1 and will continue until March 31.
