ROSALEE Davis, owner of Rosalee’s Take Away also known as Dirty’s, said it will take $45,000 and about two months of construction to rebuild her restaurant after it was completely destroyed in a fire last month.

Ms Davis, 76, told The Tribune yesterday the fire was started after one of her workers left the fryer on by mistake at her Poinciana Drive location. The fire, on August 30, spread from the stove to the walls and in less than 30 minutes the entire shop was engulfed in flames, she said.

Ms Davis, who has been renting the building for 33 years, said she will rebuild the restaurant, which will be better than before.

“One of the girls left the fryer on when they left around 2am and I got a call from a neighbour around 5am saying the place was on fire,” she said.

“The electrician went in and said the oil boiled so hot that it caught on fire and it burned completely. I am going to fix it. It’s not my building but I rent it and I didn’t meet the man’s place like that so I won’t leave it like that. We start work on Monday.

“We hoped to start earlier but the fire was so bad it could not just be redone. We have to get a permit and it will take about $45,000 and we will need a month. We have been around for almost 50 years, so this will not stop me. I don’t let anything get me down.

“I am 76 – it makes no sense getting upset about these things. But look out for us, we will be back. Until then we still have the Nassau Street location open.”
